Being The Rock Father, my days are long and action-packed. After all, I’m a work-at-home Dad with a pair of young daughters (8 months, 3 years) that require constant attention while my wife works long hours at her “normal” job. Figure in the daily routine of maintaining this website, doing the occasional freelance gig, and having fun adventures with the girls, and I need fuel. I’m a coffee junkie. 

That said, I’m always on the lookout for new ways to satisfy my nearly-insatiable caffeine cravings, and one recent way is by making some tasty beverages right here at Rock Father HQ. With time and money both a factor, I’m sharing with you my personal recipe for a killer, low-calorie drink that merges a few of my loves into one big glass of Rock Father Fuel: Coffee… Caffeine… Peanut Butter… Chocolate. What makes this possible? International Delight Light Iced Coffee.

Just released in Vanilla and Mocha (with Caramel Macchiato due in June), the International Delight Light Iced Coffee is just 100 Calories per serving, with 33.3% fewer calories and 39% less sugar than their regular iced coffee. The best part? At a suggested price of $3.99, you can get a full half-gallon for less than the price of a 16oz cup at some coffee shops you’re probably used to.

So here’s my recipe… blazing fast, and oh so good…

The Rock Father’s Peanut Butter & Chocolate (on the rocks):

You Will Need:

  • International Delight Light Iced Coffee – Mocha
  • Fat Free Whipped Cream Topping (Spray)
  • Peanut Butter & Chocolate Desert Topping (Mixed cookie pieces, chocolate & peanut butter chips, and sprinkles)
  • Ice
  • Glass of Choice

Instructions:

  1. Place ice in glass.
  2. Pour in the International Delight Light Iced Coffee
  3. Swirl Whipped Cream on top.
  4. Sprinkle with Peanut Butter & Chocolate Toppings
  5. Drink Up!

Now, you might opt for a more traditional type of cup or glass like you’d typically find an iced coffee served in. Here at Rock Father HQ, I like to do things with a touch of class, so I sometimes go with a Wine Glass:
