Weekends are Made for Family and Hungry Jack…(+ a Giveaway, Too!)

Breakfast is hands-down my favorite meal of the day, and when it comes to making breakfast for our family, The Rock Daughters have a requirement that pancakes be present. I’ve been on a mission for quite some time to make the “perfect” pancake, and it’s a challenging thing. For awhile, the girls wanted their pancakes on the thin side, and now they like them thicker – finally in what I consider to be the “normal” way. If they’re not just right (keeping in mind that “right” is on a scale that slides much like the mood of these youngsters), they’ll let me know. It could be the size, shape, color, depth – I never know, but with the weekday mornings being as hectic as they are, it’s the weekend when I can work to hone my pancake skills, particularly on Sunday mornings since Saturday as us out the door bright and early for ballet and tap.

The opportunity to cook for my family on a Sunday morning is something that I always enjoy – and if the right conditions are present, the girls will tone-down their always-energetic vibe long enough to sit at the table with Mommy while I work on the pancakes… in a small skillet, one at a time, usually sipping a cup of Folgers coffee while I work.

You could say it’s an art.

Well, not as artistic as those guys that can make a museum-worthy portrait out of a breakfast, but a perfect circle with just the right amount of brown is a straight-up victory.

The preferred pancake for the girls of late is the Hungry Jack Pillsbury Funfetti variety, though they’ll occasionally cast votes between that or Chocolate Chip. If they come out just right, a dab of butter, and a little drizzle of the Original Hungry Jack Syrup (in that famous microwavable bottle) is all they need to top them off.

I do like some eggs with mine, but this looks like perfection.

If the weekend could be every day, there would always be breakfast that rocks.
